Working with the Sales Calculations Tab

Use the Sales Calculations tab to define whether to include or exclude comps and promos from net sales, and other default settings used in sales calculations used for Aloha Insight reporting.

Change 0 Guest Counts to 1

— Indicates Aloha Insight changes zero guest counts to one for reporting purposes. Quick Service establishments that set guest counts to 0 use this setting. Table Service establishments can take advantage of this to track bar guests where the bartender is not prompted for the guest count. When polling occurs, a guest count of 0 imports as the value of 1. This setting only affects Aloha Insight reports.

Exclude Hours From $0 Employees

— Excludes employees with a $0 pay rate from Aloha Insight labor reports. Select this option to exclude salaried managers from Aloha Insight labor reports.

Exclude Hours from Unscheduled Employees

— Excludes hours for employees who worked unassigned shifts. Labor reports assume no one worked the hours. You must use Labor Scheduler to track labor hours, as well as clock in/out times, to get labor data to report within Aloha Insight.

Auto create Records for Unassigned Shifts

— Includes hours for shifts not assigned to employees on Aloha Insight labor reports. This is useful for companies using Aloha Labor Scheduler, which generates schedules based on sales trends and labor rules. Set Labor Scheduler to generate unassigned shifts, which enables management to assign employees of their choice to the shifts. By selecting this option, Aloha Insight labor reports assume unassigned shifts were filled; therefore, Aloha Insight reports include labor hours for unassigned shifts.

Show Overtime Pay as time and a half

— Determines how overtime appears on Insight reports. Enable ‘Show Overtime Pay as time and a half’ to show overtime earned as time and a half rather than half time. For example, an employee earns $10.00 an hour and they work 40 hours regular time and 10 hours of overtime. If you enable this option, regular pay equals $400.00 and overtime pay equals $150.00. If you clear this option, regular pay equals $500.00 and overtime pay equals $50.00.

Check Average Method

— Determines the method to use for averaging guest checks. Select one of the following methods:

Gross

— Bases the guest check average on gross sales. Gross sales include all taxes and surcharges. ‘Gross’ equals total gross sales divided by total guest.

Net

— Bases the guest check average on net sales. Net Sales excludes taxes and surcharges. Depending upon selections made in the Exclude Promos and Comps from Net inset, net sales may exclude all or certain comps and promos. ‘Net’ equals total net sales divided by total guest checks.

Straight

— Bases the guest check average on straight sales. Straight sales include reductions, exclusions, taxes, and surcharges. ‘Straight’ equals total straight sales divided by total guest checks.

PPA Method

— Displays the method you use to calculate your Per Person Average (PPA). Select one of the following:

Gross

— Bases the PPA on gross sales. Gross sales include all taxes and surcharges. ‘Gross’ equals total gross sales divided by total number of guests.

Net

— Bases the PPA on net sales. Net Sales excludes taxes and surcharges. ‘Net’ equals total net sales divided by total number of guests.

Straight

— Bases the PPA on straight sales. Straight sales include reductions, exclusions, taxes, and surcharges. ‘Straight’ equals total straight sales divided by total number of guests.

Elapsed Time Method

— Indicates how you want to calculate the length of time it takes to serve a guest. Aloha Insight uses the elapsed time on the “Speed of Service” reports in Reports Viewer. ‘Last Ordered to Bump \ Close Time’ is the default speed of service selection. Select from the following values:

•	First Ordered to Close Time— This value is calculated as the time that elapses between when you add the first order to the check and when you close the check. This value is calculated as ((CloseHour * 60 + CloseMinute)) – ((FirstOrderHour * 60 + FirstOrderMinute)).

•	First Ordered to Last Ordered — This value is calculated as the time that elapses between when you add the first order to the check and when you add the last order to the check. This value is calculated as ((LastOrderHour * 60) + LastOrderMinute)) – ((FirstOrderHour * 60) – FirstOrderMinute)).

First Ordered to Last Payment — This value is calculated as the time that elapses between when you add the first order to the check and when you apply the last payment to the check. This value is calculated as ((LastPaymentHour * 60) + (LastPaymentMinute)) – ((FirstOrderHour * 60) – (FirstOrderMinute)).

Last Ordered to Bump / Close Time — This value is calculated as the time that elapses between when you add the last order to the check and when the last order is bumped from the check. ((LastBumpHour * 60) + LastBumpMinute)) - ((LastOrderHour * 60) + (LastOrderMinute)). If your store is not using a video system, such as Aloha Kitchen, then the time when you close the check will be used. This value is calculated as ((CloseHour * 60) + CloseMinute)) - ((LastOrderHour * 60) + (LastOrderMinute)).

•	Last Ordered to Last Payment — This value is calculated as the time that elapses between when you add the last order to the check and when you apply the last payment to the check. This value is calculated as ((LastPaymentHour * 60) + (LastPaymentMinute)) – ((LastOrderHour * 60) + LastOrderMinute)).

•	Open Time to Close Time — This value is calculated as the time that elapses between when you first open the check and when you close the check. This is calculated as ((CloseHour * 60) + (CloseMinute)) – ((OpenHour * 60) + OpenMinute)).

•	Open Time to Last Ordered — This value is calculated as the time that elapses between when you first open the check and when you add the last order to the check. This value is calculated as ((LastOrderHour * 60) + (LastOrderMinute)) – ((OpenHour * 60) + (OpenMinute)).

•	Open Time to Last Payment — This value is calculated as the time that elapses between when you first open the check and when you apply the last payment to the check. This value is calculated as ((LastPaymentHour * 60) + (LastPaymentMinute)) - ((OpenHour * 60) + OpenMinute)).

•	Seat Time to Close Time (ProHost) — This value is calculated as the time that elapses between when you first seat the party and when you close the check. This value is calculated as ((CloseHour * 60) + CloseMinute)) – ((SeatHour * 60) + SeatMinute)).

•	Seat Time to Last Ordered (ProHost) — This value is calculated as the time that elapses between when you first seat the party and when you add the last order to the check. This value is calculated as ((LastOrderHour * 60) + LastOrderMinute)) - ((SeatHour * 60) + SeatMinute)).

•	Seat Time to Last Payment (ProHost) — This value is calculated as the time that elapses between when you first seat the party and when you apply the last payment to the check. This value is calculated as ((LastPaymentHour * 60) + LastPaymentMinute)) - ((SeatHour * 60) + SeatMinute)).

Tip % Threshold

— Displays the percent of tipped sales that appear in the Employee Pay with Punch Clock Data report. The default is .08 percent. The percentage entered is multiplied by total sales. You must enter a value to the hundredth, such as .08.

Exclude Promos & Comps from Net

Include All Promos in Net Sales

— Includes all promos in net sales calculations in Aloha Insight reports.

Exclude All Promos from Net Sales

— Excludes all promos from net sales calculations in Aloha Insight reports.

Selected Promos Button

Click the Selected Promos button to display the Company Setup - Exclude Promotions screen, which enables you to exclude selected promos from Aloha Insight reports.

Include All Comps in Net Sales

— Includes all comps in net sales calculations in Aloha Insight reports.

Exclude All Comps from Net Sales

— Excludes all comps from net sales calculations in Aloha Insight reports.

Selected Comps Button

Click the Selected Comps button to display the Company Setup - Exclude Comps screen, which enables you to exclude selected comps from Aloha Insight reports.

Other Net Sales Exclusions

Exclude Surcharges from Net Sales

— Excludes surcharges in net sales calculations. Surcharges are still included in gross sales and cash calculations.

Exclude Order Mode Charges from Net Sales

— Excludes order mode charges in net sales calculations. Order mode charges are still included in gross sales and cash calculations.

Training Data Exclusions

Exclude Sales of Employees in Training

— Excludes sales of employees on reports that have their job code set as training in Job Code Maintenance > Job Code in Aloha Manager.

Exclude Hours of Employees in Training

— Excludes hours of employees on reports that have their job code set as training in Job Code Maintenance > Job Code in Aloha Manager.

Exclude Tips of Employees in Training

— Excludes tips of employees on reports that have their job code set as training in Job Code Maintenance > Job Code in Aloha Manager.
