Drilldown Viewer Glossary The Drilldown Glossary provides a brief description of the column headings. A column heading may appear in more than one drilldown option. A - C D - I J - O P - T V - % Actual Hours — Displays actual hours worked, including overtime, by all employees. Actual Labor — Reports the total labor dollars divided by actual net sales. Actual Labor % — Displays actual labor percentage for a store. You calculate Labor% by dividing Actual Pay by Actual Sales. Actual Pay — Displays actual wages paid, including overtime wages, to all employees. Actual Sales — Displays actual net sales generated by the store. Amount — Displays the number of payments per the tender type. Amount Sold — Displays the number of items sold. Amount Tendered — Displays the dollar amount of sales that occurred per the tender type. Category — Displays the categories for the store as links. Check # — Displays the guest check number. Check Count — Displays the number of items sold per the guest check. Check Sales — Displays the total sales of all items on the guest check. Additional charges to the guest such as exclusive taxes and reductions to the guest, such as check comps or promotions, are not included in the Check Sales amount. Close — Displays the time the guest check was closed. Cost — Displays the average plate cost to produce the item. When a company goes live with Aloha Insight, you enter the cost for the item in the Aloha system. The total cost of all items sold in the category highlights in blue. Refer to Items in the Aloha Table Service or Quick Service User Guide for more information on defining items. Cost % — Displays the food cost percentage. You divide item cost by item sales to calculate Cost %. Count — Displays the number of items. Customer — Displays the number of customers served. Date — Displays the date for each day within the date range selected. Day Part — Displays the day parts as links. Click the link to drill down and view more data on the desired day part. Deposit Amount — Displays the total dollar amount of all deposits for stores in the area or region selected, per day. Description — Displays the deposit description entered by the manager through the Back-of-House (BOH) Deposit function. Employee — Displays the employee who opened the guest check. Employee Name — Displays the employee defined for the job position as links. Click the link to drill down and view additional data on the desired employee. Gross Sales — Displays the gross amount of sales per the revenue center. Gross sales include all sales, comps, promotions, surcharges, and order mode charges. Hour — Displays the hour per the day part as links. Click the link to drill down and view more data on the desired hour. Hours — Displays the total labor hours for each job position. In — Displays the time the employee clocked in. Item — Displays the category items, by short item name, as links. Click the link to drill down and view more data on the desired item. Define the short item name when you build the Aloha database. Refer to Items in the Aloha Table Service or Aloha Quick Service User Guide for more information. Item Name — Displays the items ordered on the guest check. Item Sales — Displays the total sales per item. The subtotal for Item Sales highlights in blue. Additional charges, such as exclusive taxes, promos, and comps, do not affect the Item Sales amount. Job Position — Displays the job codes as links. Labor % — Displays the labor percentage per the revenue center. Labor % is calculated as Labor divided by Net Sales for the revenue center Labor Cost — Displays the labor costs for each store within the region. To calculate Labor Cost multiply Labor Hours by Pay Rate. Labor Hours — Displays the total labor hours for the job code. Manager — Displays the manager who approved the void. Menu Item — Displays the voided guest check item. Name — Displays the name of the comp or promo as links. Click the link to drill down and view more data on the desired comp. Net Sales — Displays the sales amount less taxes and selected comps, promos, and categories, as defined in Company Setup. Number of Checks — Displays the number of checks opened per the order mode. Number of Items — Displays the number of items ordered per the day part. Open — Displays the time the guest check was opened. Order Mode — Displays the name of the order mode as links. For example, delivery orders may have additional charges added to the order. Order Mode Count — Displays the number of items ordered. Order Mode Sales — Displays the subtotal order mode sales per the guest check. Order Mode Sales is calculated as subtotal sales, plus comps and promos, minus refunds. Order Time — Displays the time the items were ordered. OT Hours — Displays the overtime labor hours for each job position. OT Labor — Displays the total dollar amount of overtime, for each job position. Out — Displays the time the employee clocked out. Percentage — Displays the percent of sales for the selected item. Percent is calculated by date total divided by grand total for all days selected. PPA — Displays the per person average (PPA) for the revenue center. PPA is calculated as net sales divided by total number of customers. Price — Displays the price of the item. Revenue — Displays the name of the revenue center. Revenue Center — Displays the name of the revenue center as links. Click the link to drill down and view more data on the desired revenue center. Sales % — Displays the item PMIX percentage. Calculate the Item PMIX percentage as the item sales divided by total item sales for all items reported by category. Scheduled Hours — Displays scheduled hours for all employees configured through Aloha Labor Scheduler or Aloha Employee Scheduling. Scheduled Labor — Reports the total scheduled labor dollars divided by projected net sales. Scheduled Labor % — Displays the scheduled labor percentage. Calculate Scheduled Labor% as Scheduled Pay divided by Scheduled Sales. Scheduled Pay — Displays scheduled pay for all employees. Scheduled Sales — Displays sales projections calculated by the Projected Sales wizard for the store. Store — Lists the stores available to view. This depends on your security access. Tender — Displays the tender description as links. Click the link to drill down and view more data on the desired tender. Time — Displays the time of the void. Tips — Displays the amount of tips per the tender type. Tips entered into the system per the tender type are polled from the stores. Total — Displays the total comp or promo dollars for the selected comp or promo associated with the selected date. Total Tendered Amount — Displays the total dollar amount of the selected tender type amount per store. Void Description — Displays the void descriptions as links. Click the link to drill down and view more data on the desired void description. % (Hourly Mix Percent) — Displays the hourly mix percent that occurred during the hour compared to total item sales. Calculate Hourly Mix Percent as the hourly sales divided by the total item sales. % (Check Sales Mix Percent) — Displays the percentage of total sales per the selected item, for the selected day part, by date. Calculate % (Check Sales Mix Percent) as the date total divided by grand total for all days selected. % (Item Mix Percent) — Displays the item mix percentage of total sales. Calculate Item Mix Percent as the item sales diided by the category sales. % (Percent of Sales) — Displays the percentage of total item sales. Calculate Percent of Sales as the category item sales divided by the total item sales. % (Period Mix Percent) — Displays the period mix percentage of total sales. Calculate Period Mix Percent as the day part sales divided by the total item sales. % of Order Mode Sales — Displays the variance between day part sales and total order mode sales. Calculate % of Order Mode Sales as Item Sales divided by total Item Sales. % Of Promo Sales — Displays the percentage of item sales for the guest check. Calculate % of Promo Sales as item sales divided by grand total for all item sales. % Of Total Labor — Displays the percentage of total labor for the revenue center. Calculate % of Total Labor as total % of Total Labor divided by the grand total % of Total Labor. % Of Total Sales for Hour — Displays the percentage of total order mode sales for the hour. Calculate % of Total Sales for Hour as order mode item sales for the hour divided by the total item sales for the hour. % Of Total Sales for Period — Displays the percentage of order mode sales for the day part. Calculate % of Total Sales Per Period as Item Sales for the order mode by day part divided by grand total Item Sales for the day part. % Percent — Displays the percentage of total sales per day, for the selected hour. Calculate the percentage as the date total divided by grand total for all days selected. % Percentage — Displays the percent of sales. % (Variance) — Displays the variance between Actual and Scheduled figures. Calculate the variance as Actual minus Scheduled divided by Scheduled ((Actual - Scheduled)/Scheduled).
